Shochu
Shochu, Japan's answer to whisky and brandy, consists
of distilled spirits made from a variety of raw
materials. It is clear and colorless, like sake,
but has a clean, dry taste.

DRINKING SHOCHU
Shochu can be drunk straight, either "on the
rocks" or heated, but it is usually drunk either
mixed with hot water (oyuwari) or as a base for
cocktails.

Oyuwari
Typical ratios of hot water to shochu are
5:5 (go-go-wari) or 6:4 (roku-yon-wari). |
Chuhai
Shochu mixed with soda water and flavored
syrup and served with ice and a slice of lemon,
lime or other fruit is called chuhai (a contraction
of "shochu highball"). It is a cheap,
refreshing long drink that has recently become
very popular among young people. |

Kajitsuchu
Kajitsuchu, or fruit liquor, is made by steeping
various kinds of fruit in shochu with sugar, thus
sweetening the alcohol and imparting the flavor
of the fruit to it. Japan's Liquor Tax Act allows
all the kinds of fruit, but grapes, such as ume
(Japanese apricots), strawberries, and plums to
be used for this.

Shochu
Howaito rika (white liquor), a type
of shochu with an alcohol content of
35% is usually used. |

Korizato
Sugar is usually used in the form of
korizato, the most highly-refined form
available, which comes in large, irregular
lumps. |

HOW TO MAKE UMESHU
1) Wash some fresh, green ume, and make a few holes in
each with a bamboo skewer.
2) Place alternate layers of ume and korizato in a wide-mouthed
glass jar.
3) Finally, fill the jar with shochu. Seal the jar tightly
and store in a dark place. The longer you leave it, the
more delectable your umeshu will became.
