[Matcha/Gyokuro/Kawaricha] |

Matcha and gyokuro are
top-quality teas made by covering the young leaves
that come out in May with straw to protect them
from the sunlight. Matcha is not a tea that is drunk
every day, but it is indispensable to the tea ceremony.
| Matcha is made by removing
the stalks from specially-grown young
leaves and grinding the leaves to powder
in an usu (mortar). It is a brilliant
green color. |

HOW TO MAKE MATCHA

1) Using a chashaku, place
2 spoonfuls of matcha in a heated chawan.
|
2) Pour hot water into the bowl using
a hishaku. |
3) Holding the chawan
steady with one hand, whisk the tea
with a chasen until a fine foam is produced. |

Iced
green tea
Iced green tea can be made by adding sugar to matcha
and mixing it with cold water and ice. It is a clear,
bright-green color. |
|
Gyokuro
Gyokuro, which has a strong natural sweetness, is
drunk in small quantities from a special, small
chawan. Freshly-boiled water that has been allowed
to cool to 40 - 50℃ should be used. |
Kawaricha
Kawaricha is the name given to special teas drunk at different
seasons and on different occasions to celebrate the season,
or to express congratulations or a wish.
 |
Sakurayu
Sakurayu is hot water with salted cherry blossoms
floating in it to represent spring. It is often
drunk at weddings or engagement parties. |

Ofukucha
Ofukucha (literally, "tea of happiness")
is a mixture of bancha, kombu, umeboshi, etc. It
is drunk at New Year and Setsubun, the beginning
of spring according to the old Chinese calendar. |

|
| Nihoncha is easily damaged by humidity,
and the Japanese have devised various ways of storing
their tea and preserving its natural color, taste,
and fragrance. Shops store it in unglazed earthenware
urns (cha-tsubo) or tin-lined wooden boxes (cha-bako),
while at home it is kept in special canisters called
chazutsu. |
